In panel 5, I described the Japanese restaurant I was at as a "Benihana-type place". I've only just learned that the word teppanyaki means that (i.e., a place where the chef makes a show of cooking the food on a metal grill in front of the diners).

I've had teppanyaki before too, and it included the best lobster I've ever tasted.

The chef split the lobster in two lengthwise and placed it flesh side down on the grill with some water and then covered it so it could steam a bit. After a few minutes of preparing other things he went back to it and removed the meat and guts and chopped them all up together then let them fry some more.

I have NEVER eaten the guts out of a lobster before but I have to say, it completely intensified the flavour. It was amazing. I guess the guys I've seen suck lobsters dry know what they're doing. I really want to have lobster prepared like that again.

As a sidenote, I should point out that Mongolian Grill is based on the Taiwanese version of teppanyaki. It was just called "Mongolian" to give it an exotic name, and has nothing to do with Mongolia. The same griddle surface is also used for Korean barbeque or yakiniku (the Japanese version).
